Ingredients
1! Basmati Rice - 2 cups
2! Fish (preferably white fish like cod or tilapia) - 500g
3! Fresh herbs (dill, cilantro, parsley) - 1 cup, chopped
4! Garlic - 4 cloves, minced
5! Green onions - 3, finely chopped
6! Spinach - 1 cup, chopped
7! Fenugreek leaves - 1/2 cup, chopped
8! Persian spices (turmeric, cumin, coriander) - 1 teaspoon each
9! Salt and pepper - to taste
10! Olive oil - 4 tablespoons
11! Lemon juice - 2 tablespoons
[Preparation - Rice]! Let’s start by preparing the rice. Rinse 2 cups of Basmati rice under cold water until the water runs clear. Soak the rice in water for about 30 minutes. In a pot, bring water to boil, add salt, and cook the rice until it’s about 70-80% done. Drain the rice and set it aside.
[Preparation - Fish]! Now, let’s move on to the fish. Season the fish with salt, pepper, and a pinch of turmeric. In a pan, heat 2 tablespoons of olive oil over medium heat. Cook the fish for about 2-3 minutes on each side until it’s golden brown. Once done, set the fish aside.
[Preparation - Sabzi Polo]! The heart of our dish is the Sabzi Polo, a flavorful herb mixture. In a large pan, heat the remaining 2 tablespoons of olive oil. Add minced garlic and sauté until it’s aromatic. Then, add chopped green onions, spinach, fenugreek leaves, and the Persian spices (turmeric, cumin, coriander). Cook this mixture for about 5-7 minutes until the greens are wilted.
[Assembling]! Now, it’s time to bring everything together. In the pan with the Sabzi Polo mixture, layer the partially cooked rice evenly. Sprinkle chopped herbs like dill, cilantro, and parsley on top. Place the seared fish on the bed of rice and herbs. Drizzle lemon juice over the entire dish.
[Cooking]! Cover the pan with a lid and let it cook on low heat for about 20-25 minutes. This will allow the flavors to meld, and the rice to finish cooking.
