Charcuterie Special | Duck Bresaola

This is a very basic recipe to make air-dried duck or duck bresaola that’s easy enough to make at home. When I was working in restaurant kitchens I would serve this delicious dried duck with fresh figs, pecorino, honey, eve and watercress.
