600 g pork with at least 30% fat
1 thumb ginger

4 tbsp. warm water
2 tbsp. light soy sauce
1 tsp. oyster sauce
1 tsp. salt
1 tsp. ground white pepper
1 egg
1 tbsp. sesame oil
¼ cup chopped scallion
**Dipping sauce ingredients**
1 tbsp. red pepper flakes
3 cloves garlic
1 tbsp. sesame oil

2 tbsp. hot boiling oil
