It has a spicy traditional filling of potatoes and peas which we all lvoe and served with #chutney #corianderchutney and a spiced filling usually made with potatoes, spices and herbs. #Rainbowsamosa #samosa #recipe #streetfood #youtuber #youtube #easyrecipe #cheflife #recipe Ingredient Quantity For dough Refined flour 6 cups Carom seeds 2 tsp Black pepper crushed 2 tsp Salt to taste Ghee 8 tbsp Beetroot puree 2 tbsp Carrot puree 2 tbsp Turmeric powder a pinch Spinach puree 2 tbsp Black salt to taste Black sesame seed paste 2 tbsp Water as required Blue tea powder 1 tbsp Water as required For filling Oil 2 tbsp Cumin seeds 1 tsp Ginger chopped 1 tbsp Green chillies chopped 3 no Green peas ½ cup Red chilli powder 1 tsp Black salt ¼ tsp Coriander powder 1 tsp Chaat masala ½ tsp Garam masala 1 tsp Cumin powder ¼ tsp Salt to taste Potatoes (boiled and mashed) 3 no Coriander chopped 2 tbsp Oil for frying Method: 1. In a bowl add refined flour, carom seeds, black pepper crushed, salt, and ghee mix well. 2. For beetroot, take 1 cup dough mixture; add beetroot puree and knead stiff dough. Cover it with moist muslin cloth and keep aside. 3. For carrot, take 1 cup dough mixture; add carrot puree, turmeric powder. Knead and keep aside. 4. For spinach, take 1 cup dough mixture; add spinach puree, black salt. Knead and keep aside. 5. For black sesame seed, take 1 cup dough mixture; add black sesame seed paste gradually add water and knead the dough. 6. For blue tea powder, take 1 cup dough mixture; add blue tea powder gradually add water and knead the dough. 7. Take the remaining mixture; add water and knead it. 8. Heat oil in a pan; add cumin seeds, ginger, green chillies and sauté for 1 min. 9. Add red chilli powder, black salt, coriander powder, chaat masala, garam masala, cumin powder, salt and sauté on low flame for 10 seconds. 10. Add potatoes, coriander and mix well. 11. Remove the filling in a bowl mix and keep aside until cool. 12. Divide each dough into equal portions and roll the dough into flat strips. 13. Now put the rolled strips on top of the other by applying water on the edge of each dough and roll it again. 14. Cut it into 3 equal parts fold the strip to make a cone and the cone with spoonful of the prepared filling. Gently fold one end and seal to get the samosa shape 15. Repeat for the remaining dough and keep aside. 16. Heat oil in a deep kadai and deep fry the rainbow samosas till crisp and golden brown. 17. Remove the fried rainbow samosas on absorbent paper. 18. In a serving plate serve the rainbow samosa along with the chuntey.
