Bake yourself into a tropical paradise with this quick irresistible mango bread recipe.
Ingredients
1 cup all purpose flour
1 tsp baking soda
1/4 tsp cinnamon
1/4 tsp salt
1/4 cup butter, softened
1/4 cup vegetable oil
1/2 cup white sugar
1 egg
1/2 tsp vanilla
1 1/2 cup diced mango, approximately one large
1 tsp of grated or ground ginger
Preheat oven to 350 degrees. Grease loaf pan. In a large bowl combine flour, baking soda, cinnamon and salt. In a smaller cream together softened butter, oil, sugar, egg, and vanilla until blended. Add wet ingredients to dry flour mixture and stir until combined. Add mango and grated ginger, to batter and fold in gently. Batter can still have some lumps. Pour batter into loaf pan and bake for 50-60 minutes, until toothpick inserted into loaf comes out clean. Let cool and cut into slices. Enjoy.
