Although the Mid Autumn festival has a cultural significance to me, as a girl from a Chinese family, it’s really the mooncakes that always had me looking forward to it as a kid. I didn’t get to eat a lot of snow skin mooncakes while growing up, but I’ve come to enjoy making them. I love how it allows more room for creativity compared to traditional baked mooncakes. It’s much healthier as it requires less fat and is also easier to put together, relatively speaking. These mooncakes have a mochi-esque texture as opposed to the cakey traditional mooncakes and they don’t require baking.
