Pasta Grannies enjoy hand-rolled long maccheroni tubes called ’fusilli di Felitto’
Lina is a master fusilli maker, rolling 30 centimetre / 1 foot long maccheroni without even looking at what she’s doing. These fusilli use an especially fine rod; watch and admire her work.
For the pasta, Lina uses 1 kilo of semolina flour, but this is enough for a party. To make enough for 6-8 people use 400g, 2 eggs, around 50ml of water, plus half a teaspoon of salt.
For the sugo: one onion, 1 carrot, 500g of beef shin (or mutton shoulder) 700ml tomato passata, a handful of basil leaves, salt. Grated pecorino to serve if you want.
