Crispy, spicy, tangy chicken, this is a Indo-Chinese classic - Chicken Manchurian.
INGREDIENTS
vegetable oil for deep frying
400g chicken thigh fillets, cut into 1-inch pieces
1tsp light soy sauce
Pinch white pepper
Egg whites of 2 eggs
3 – 4 tbsp corn flour
4 garlic cloves, chopped
½ red onion
1 green pepper
1 red pepper
2 red bird’s eye chillies, sliced
2 green bird’s eye chillies, sliced
FOR THE SAUCE:
1tbsp oyster sauce
1tsp light soy sauce
1tsp white wine vinegar
1tsp light brown sugar
2tbsp ketchup
1 – 2 tsp red chilli sauce or sambal (optional)
80 – 100ml water
Cornflour slurry, to thicken
1 spring onion, sliced
