Pelmeni /Ravioli/ is a dish widely known in many countries. Many peoples have traditions of cooking meat in dough, let’s remember the same Georgians from Khinkali, the Chinese with their many culinary inventions. And the main question: who first invented this dish? According to the most common version, dumplings first appeared in China, where they were called “jiao zi“ at the time. From there they spread to Siberia, Central Asia, and the Caucasus. It is interesting that until the 1820s and 30s, no mention of dumplings can be found in Russian literature. They are not even in the book “Soldier’s Kitchen“ by the popular Russian cook S. Drukovtsev (1786).
