Nazkhatoun is one of the traditional pickles of the northern Iran, which is very delicious and easy to make. The combination of smoky eggplants and the aromatic herbs, which are mixed with fresh verjuice, creates a unique taste that, in my opinion, goes well with any tasty dish.

2 kg of Eggplants
1 liter Verjuice
500 gr Local Basil
200 gr of Eryngium Planum (Flat Sea Holly)
100 gr Mint
1 Bunch of Garlic
1 or 2 Spicy Red Peppers
Salt as needed
