1/4 cup salt (for curing)
4 tbsp soy sauce
1/4 cup mirin
6 tbsp Trader Joe’s White Miso Paste
4 tbsp plum sauce
2 tbsp brown sugar, optional
1 tbsp sesame seeds
1 tbsp sliced chives
