Demonstration of a Classical bassoon by Peter de Koningh (c. 1990s) after Heinrich Grenser (Dresden, c. 1810). The instrument is made of stained maple with brass keys.

The crook is by Guntram Wolf. Robert makes his own bassoon reeds using cane by Medir and Neuranter.
This is the kind of bassoon that Beethoven and Schubert would have been familiar with, and for which Weber wrote his Bassoon Concerto. You can hear it being played on Boxwood & Brass’s CD:
