Once you’ve made it, you’ll want to do it again and again, experimenting with different flavors. 🥭INGREDIENTS: - 90g passion fruit puree - 110g fresh orange juice - 100g mango puree - 300g sugar - 8-9g yellow pectin - 60g glucose syrup (starch syrup) - 4g water 4g citric acid 🍊INSTRUCTION: 1. Prepare a frame in advance. Cover it with food wrap on one side. I use a metal frame 24×12cm, but you can use a round or any other form you have. 2. Mix fruit puree with part of the sugar. Dissolve citric acid in water. Mix pectin with 50g of sugar from the total amount. Heat the puree to 50°C and gradually add pectin with sugar. On low heat, stirring occasionally, continue cooking the marmalade. Gradually add the remaining sugar with glucose
