Courgettes and Carrot Savoury Muffin

These healthy and tasty vegetable savoury muffins are ideal for breakfast, lunch or as a snack for any time of the day They are light and fluffy, also look and taste amazing. SUBSCRIBE to my channel here: The ingredients are 3 Courgettes , grated 1 Cup Cheese, ( I used Hellim , Halloumi), grated 1/2 cup Self raising flour 1 Carrot , grated 1 Large Onion grated 2 Eggs , whisked Fresh Spring Onions, chopped 2 Teaspoon Salt Black Pepper (season to taste) 1 Teaspoon dried Parsley and Mixed Herbs Method Mix all the ingredients in a bowl Lightly grease and heat a muffin tray in the oven Divide the mixture equally into the tray sections and bake at 180C for 25 minutes, Serve with grated cheese, melt in the oven if you prefer melted cheese on top and sprinkle with chopped spring onions.
