Ingredients Quantity
Cashew nuts 20 no
Ghee 1 tsp 2 tbsp
Roasted chana dal 2 tbsp
Chopped ginger 1 tbsp
Chopped garlic 1 tbsp
Chopped green chillies 1 tsp
Boiled Rajma 2 cup
Salt to taste
Turmeric powder ¼ tsp
Red chilli powder 1 tsp
White pepper powder ½ tsp
Nutmeg powder 1 pinch
Cardamom powder 1 tsp
Garam masala 1 ½ tsp
Cumin powder ½ tsp
Prepared mixture 1 to 2 tbsp
Brown onion ½ cup
Cream 1 tbsp
Shahi jeera 1 tsp
Ghee 1 tsp
Saffron powder 1 tsp
Kewda water ¼ tsp
Rose water 1 tsp
Coal 1 no
Ghee 1 tsp
Clove as required
Refined flour 1 cup
Sugar 1 tsp
Saffron ½ tsp
Rose water ½ tsp
Milk ½ cup
Ghee 1 tsp
Salt to taste
Turmeric powder 1 pinch
Method
For making galouti kebab soak the rajma n then boil it in salt water and later strain it .
In a pan add cashewnuts , ghee and roast it well , till then in a mixer grinder add roasted chana dal and grind it in to a fine powder , once the cashew is been golden brown remove it in to a same grinder and grind it well , in a same kadhai add ghee , ginger , garlic , chillies , and mix it well till the garlic turns golden brown , now add rajma , salt to taste , turmeric powder , red chilli powder , white pepper powder , nut meg powder , cardamom powder , garam masala , cumin powder and mix it well now add the prepared powder , brown onion and mix it well again and transfer it in to a grinder and grind it well , add cream to it so It will be easily grind , transfer the mixture in to a bowl and now add shahi jeera , ghee , saffron powder , kewda water , rose water and mix it well . now add the foil paper and add the burnt coil on the foil paper add ghee and clove to it and cover the bowl with a foil paper and keep it aside .
Till the time in a bowl add refined flour , sugar, saffron ,rose water , milk , ghee , salt , turmeric and water as required and knead the dough properly cover it with a muslin cloth n keep it aside .
Take some amount to dough make a ball out of it and roll it like a chapati , take a round cutter and cut some circles out of it , and fry it on a non stick pan , once its done remove it in a plate and keep it aside .
Now take the prepared rajma mixture make a tikki like shape and fry it on a pan add ghee n fry it till its fully cooked ,
Take a serving plate add the chapattis on the plate and place the galouti on top of the chapatti and serve hot .
