Ingredients for Sweet Koki - Meetho Lolo
Sugar - चीनी - 1/2 Cup (100 grams)
Water - पानी - 6 tbsp
Wheat Flour - गेंहू का आटा - 2 Cup (300 grams)
Desi Ghee - घी - 8 tbsp
Cardamom - इलाइची - 5-6 , coarsely ground
How to Prepare Meethi Koki?
1. Add ½ cup sugar and 6 tbsp of water to a cooking vessel. Boil the water till the sugar dissolves completely.
2. Once the sugar dissolves, turn off the flame and allow the syrup to cool.
3. Take 2 cups of Wheat flour, add ½ tsp of cardamom powder, 4 tbsp of ghee to the flour, and mix well.
4. Pour syrup gradually and knead a stiff dough. Once done, cover it for 10 mins to set.
5. After 10 mins, apply a little ghee to your hand, add 4 tsp of water, and knead the dough a little.
6. Divide the dough into 4parts, pick one part and cover the remaining parts.
7. Roll the dough into a thick sheet of 3 or 3.5 inches diameter and mark cuts with a knife.
8. Roast the rolled sheet like a paratha over low heat.
9. Add oil to the pan and roast the paratha till brown. Repeatedly roast the koki from all sides till golden brown.
10. Similarly, prepare all the koki and enjoy with mango pickle.
