Hummus Falafel | हुम्मुस फलाफेल | Chef Harpal Singh
#Hummusfalafel are both Middle Eastern cuisine prepared using Chickpeas as their prime ingredient. The difference between them is that Hummus is a ground paste of select chickpeas combined with olive oil, spices and herbs. Whereas Falafel means a deep fried ball made of ground chickpeas.
Ingredients Quantity
For Hummus
Sesame seeds 2 tbsp
Olive oil 1 tbsp 2 tbsp
Salt to taste
Garlic cloves 6 no
Chickpeas (boiled) 1 cup
Water as required
Lemon juice 1 no.
For Falafel
Chickpeas (soaked) 1 ½ cup
Parsley ½ cup
Garlic 10 no
Black pepper crushed 1 tsp
Cumin powder 1 tsp
Red chilli powder 1 tsp
Salt as required
Onion (chopped) 1 no (small)
Green chilli (chopped) 2-3 no
Lemon juice ½ no
Oil for frying.
Method:-
For Hummus.
1. Heat up a pan and add sesame seeds and roast for few
2. Take a mixer jar add roasted sesame seeds, olive oil and grind until fine paste.
3. Then add salt, garlic cloves and grind it again.
4. Further add boiled chickpeas and grind once.
5. Add olive oil and grind it well.
6. Lastly add some water and grind till fine paste.
7. Hummus is ready remove it in a bowl. Add lemon juice in it, and mix it well and keep aside.
For Falafel.
1. In a mixer jar add soaked chickpeas, garlic cloves, black pepper crushed, cumin powder, red chilli powder, parsley and salt and make a coarse paste.
2. Remove the falafel mixture in a mixing bowl.
3. Then add chopped onion, green chilli and lemon juice mix it well.
4. Heat oil in a kadai, take spoonful of falafel mixture and take a falafel presser dip in water add the falafel mixture in a presser press it with spoon and release it in a plate.
5. Deep fry the falafel till half-done and remove in an absorbent paper.
6. Then double fry the falafel completely and remove in a plate with absorbent paper.
7. Remove the Falafel in a serving plate and Hummus in a serving bowl make a well and pour olive oil,
8. Garnish with red chilli powder on top.
9. Falafel & Hummus is ready to be serve.
10. Serve Immediately.
