MEDITERRANEAN CHICKPEA SALAD WITH FETA | Chickpea salad ready in 10 minutes | Cooking and Cups
It’s time for Mediterranean Chickpea Salad With Feta! This simple chickpea salad, ready in 10 minutes, is filling, and one of my favorite meals to have waiting in my refrigerator for healthy lunches or dinner!
📌 Ingredients:
2 heads of romaine lettuce, chopped
1 can (15 oz) chickpeas, drained and rinsed
1 cucumber, unpeeled and diced
1 cup cherry tomatoes, halved
1/2 cup kalamata olives, pitted (whole or sliced)
1/2 small red onion, thinly sliced
1/4 cup fresh parsley, chopped
2 Tbsp virgin olive oil
2 tsp balsamic vinegar
salt to taste
100 g feta, crumbled
Serving: with 1 avocado, peeled and sliced (optional)
Serves: 2-4
Store: Leftovers can be stored in the refrigerator for up to 5 days, in a covered container.
