Lemon Rice Beetroot Poriyal
Ingredients Quantity
Oil 2 tbsp
Asafoetida ¼ tsp 1tsp
Mustard seeds ½ tsp 1 tsp
Cumin seeds ½ tsp
Urad dal 1 tsp 1tsp
Chana dal 1 tsp 1 tsp
Curry leaves 8-10 no 8 10
Chopped green chillies 1 no
Peanuts 2 tbsp
Salt to taste salt to taste
Turmeric powder 1 tsp
Boiled rice 4 cups
Juice of 1 lime
Coconut oil 2 tbsp
Ginger chopped 1 tsp
Chopped green chilli 2 no
Shallots 10-20 no
Boiled beetroot 1 cup
Grated coconut 1 cup
Method
• In a kadhai add oil , asafortida m mustard seeds , cumin seeds , urad dal , chana dal , and mix it well , now add curry leaves , green chilli , peanuts , salt to taste , turmeric powder and mix it well , now add boiled rice , lemon juice , and mix it well again
• In an another kadhai add coconut oil , urad dal , chana dal , asafoetida , mustard seeds , chopped ginger , green chilly , chana dal , shallots , curry leaves , salt to taste , boiled beet root , grated fresh coconut and mix it well , let it cook for sometime .
• One it’s cooked properly remove the lemon rice and beetroot poriyal in a borosil tiffin and it’s ready to go .
