OATMEAL RAISIN ENERGY BITES RECIPE 1 cup rolled oats 2 tbsp chia seeds 1/2 teaspoon cinnamon 1/2 teaspoon sea salt 1/3 cup almond butter you want it to be loose and pourable* 1/4 cup maple syrup 1/4 cup chopped walnuts 1/4 cup raisins In a large bowl, combine the oats, chia seeds, cinnamon, and salt. Add the almond butter, maple syrup, walnuts, and raisins. Stir until everything is well combined. Roll the mixture into small balls, about 1-2 tablespoons per ball. If the dough feels sticky, wet your hands before rolling – this will make them easier to roll. NOTES *I have found that different almond butter brands have different consistencies. If your almond butter is not loose and pourable, you can heat it in the microwave for 20-30 seconds to help soften and loosen it up. Storage: Transfer to an airtight container and store in the refrigerator for up 2 weeks or in the freezer for up to 3 months.
