VEGAN BAKED FRIED RICE WITH CHEESE // recipes for my Hong Kong style cafe

A decade ago, I vowed to myself that I would veganize all my favourite Hong Kong-style café dishes. I got a little side-tracked along the way but finally, here is one of my favourite Cha Chaan Teng dishes made vegan: BAKED FRIED RICE WITH CHEESE! It’s made with a simple Chinese fried rice as a base, then layered with creamy béchamel and topped with cheese. Finally, the dish set under a broiler so the cheese melts into the sauce and gets bubbly and golden. This dish is similar to baked seafood fried rice with cheese. I’m still working on a version that is closer to that using king oyster mushrooms? We’ll see! In this version, we minimize the amount of oil to make it a bit healthier. Also, the vegan fried rice is cooked in a typical non-stick pan to make things easier for the home cook. Then, the meat and eggs are replaced with plant-based versions that taste ALMOST THE SAME!
