Glass noodles, also known as bean vermicelli, fen si, cellophane noodles, or bean thread noodles, are commonly made from mung bean, but sweet potato or tapioca starch are also used in some varieties. You can easily get glass noodles from most supermarkets, particularly Asian shops. Glass noodles are sold dry and are usually white or light brown/greyish in colour, but they become transparent and glass-like when cooked. Glass noodles have a neutral flavour and absorb liquids well, making them suitable for a wide range of dishes.
