Lechon Liempo
pork belly, off the bone
2-3 teaspoons salt
Cooking twine (string)
The Marinade
3-4 cloves garlic, finely chopped
1 tablespoon onion powder
1 ½ teaspoons sea salt
1 ½ teaspoons black pepper
1 tablespoon rice vinegar (swapsies: white wine vinegar)
1 teaspoon sugar
1 tablespoon oil
The Stuffing
1 large red onion, finely sliced
3 lemongrass stalks, well bashed
5 spring onions, roughly chopped
5-6 cloves garlic, roughly chopped
The Dipping Sauce
5 tablespoons Japanese rice vinegar (or white wine vinegar)
1 tablespoon palm sugar
¼ teaspoon salt
¼ teaspoon black pepper
3 Thai shallots (Swapsies: ½ red onion), finely sliced
2-3 mixed chillies, roughly chopped
1 spring onion, finely chopped
1 thumb sized piece cucumber, diced
