Making Traditional Uyghur

A Uyghur man makes noodles in a small village to the west of Kashgar in China’s Xinjiang Autonomous Region. The dough is spun and stretched until the strands are very thin, adding flour as necessary, and then the noodles are cut and cooked in a large pot.
