The traditional recipe for the famous French pie “Quiche Lorraine“

I found for you the oldest recipe for this French pie!
For the test:
100 g butter.
200 g of wheat flour.
1 tsp Salt
For filling:
200 ml. Milk
200 g. Sour cream
200 g. Bacon, chopped into cubes.
3 eggs.
Salt, pepper, nutmeg.
Cooking the dough:
Sift flour, add salt, mix.
Grate or chop cold butter on a grater, grind with flour.
Add a small amount of ice water, collect the dough in a bowl.
Place the dough between two sheets of baking paper, roll it lightly.
Leave to cool in the refrigerator for at least 30 minutes.
Preparing the filling:
Fry the bacon in a pan without oil.
In a bowl, beat the eggs, milk and sour cream.
Add freshly ground pepper, not a lot of salt, nutmeg. Shuffle.
Add the cooled, fried bacon. •
Preheat oven to 180 °
Roll out the chilled dough and place the mold.
Prick the bottom with a fork.
Pour the filling and distribute it over the entire surface of the mold.
Bake for 35-40 minutes.
