Simple Slow Living Activities in the English Countryside | Endless Days of Spring | Lemon Posset

Here it goes again then: Join me on Patreon ______ Slow living activities that take my mind off the busy days. It’s finally spring in the English countryside and days have been warm enough to have countless picnics and spend as much time as possible outside. I’ve been exploring gardens and going out every evening to catch the sun. I’ve also experimented with this traditional English lemon posset recipe: 600ml double (heavy) cream 100 g sugar (use 150g if you want a sweeter desert) 4 lemons 2 more lemons for zest Cut 4 lemons in half and remove the flesh. Set the skins aside and squeeze the flesh through a sieve so that no bits or lemon seeds get in. Set aside. Zest 2 lemons. In a small saucepan combine cream, sugar and lemon zest. Bring to a simmer, but don’t let it boil. Simmer on low heat for 5 mins until it thickens slightly. Remove from heat and pour in lemon juice. Stir well until it thickens a bit more. Pour into lemon skins and refrigerate for at least 2h or overnight.
