From Farm to Oven: Handpicked Blueberries Turned into Deliciously Healthy Morning Buns 🫐🫐🫐
Recipe ⬇️⬇️⬇️
Dough
* 265g warm milk
* 75g sugar
* 9g salt
* 7g dry instant yeast
* 70g egg
* 450g bread flour
* 45g soft butter
Blueberry filling
* 250g frozen or fresh wild blueberries
* 80g sugar
* Zest of 1 lemon
* Juice of 1/2 lemon
* 1 tbs cornstarch mixed with 1 tbs sugar
✨Night before prepare the dough by making zing all ingredients together, develop gluten, proof for 1 hour, move yo fridge for slow fermentation overnight.
✨Night before prepare the filling : Mix blueberries and sugar, over medium high heat, add lemon zest and lemon juice, let it simmer, until all juices will start bubbling, add 1tbs sugar and 1tbs cornstarch add to a blueberry mixture, cook until filling will get thicker. Let cool off, store until needed.
✨Next morning roll the dough into 16x16” square. Spread thin layer of blueberry filling over the dough. Fold the dough as a letter.
Chill in freezer for 1 hour. Cut into 2” pieces.
Shape as desired.
✨Bake at 325F for 25 min
