Eight Treasure Congee Recipe

This porridge is very nutritious and comforting, contains whole grains, nuts, and dried fruits. It is one of my favorite breakfasts. I like to make a big batch. Divide it into mason jars and freeze it. Whenever you want to eat again, just microwave it. I hope you give this a try soon. INGREDIENTS (serves 4 - 5) 3 tbsp of glutinous rice (Amazon Link - ) 3 tbsp of jasmine rice (Amazon Link - ) 3 tbsp of forbidden rice (black rice) (Amazon Link - ) 3 tbsp of red beans (Amazon Link - ) 3 tbsp of mung beans (Amazon Link - ) 3 tbsp of coix seed (Amazon Link - ) 3 tbsp of raw peanut 3 tbsp of lotus seeds (Amazon Link - ) A handful of red jujube, seeded (Amazon Link - ) 2 liters of water 1/4 cup of sugar or to taste Some Asian stores will sell all the ingredients in a mixed package but I want to use my own formula. Just want to point out a statement here: even though it says 8 treasures, it doesn’t need to be exactly 8 ingredients, you can use a couple less or more depending on what you have. Soak all the ingredients in the fridge overnight, except the red jujube and sugar. Rinse them under running water several times then drain the water. Bring 2 liters of water to a boil and add the soaked ingredients. Wait for the pot to come back to a boil. Switch the heat to low and simmer for 1 hour. 15 minutes before it is ready, add the red jujube. Some people like to add them in the beginning. You can do that too. I like to be able to chew on these little dry fruits. Also, this is the point to check the consistency of your porridge. If it is too thick, you can add some water. If it is too think, you may want to cook it a little longer. Add sugar or honey to taste. Enjoy! Note: If you cook this in a pressure cooker or an instant pot, you don’t need to pre-soak the ingredients. Just rinse everything under running water several times. Place all the ingredients and pour around 8 cups of water into the instant pot or pressure cooker. Cook for 30 minutes on high pressure. Add sugar to taste.
