Before the coffee gets cold by Toshikazu Kawaguchi is Home by Natalie Walton * CHICKEN AFRITADA RECIPE* Ingredients: 1 kilo Chicken drumsticks or thighs 1 tbsp of vegetable oil 3-4 cloves of garlic 1 onion 4 large tomatoes 2 tbsp fish sauce 1 cup water 3 dried bay leaves 3-4 potatoes 3-4 carrots Tomato paste or tomato sauce 1/2 cup green peas Salt and pepper Instruction: -Ready all the ingredients -Brown the chicken in a pan -Sauté garlic and onions, cook for a couple of mins -Add fresh tomatoes, cook for 4-5 mins until tomatoes soften -Add the chicken -Add the fish sauce and water. -Add the bay leaves, simmer until chicken is tender -Add potatoes and carrots, cook for about 10 mins -Add bell peppers, continue to simmer for 5 minutes -Add tomato paste ( I also add tabasco or dried paprika if I want it to be a little spicy) -Add green peas -Salt and pepper or add more fish sauce, adjust this to your liking -Serve with white rice and Enjoy! :) #christmas
