This is the best cheesecake recipe published by Michelin three-star chef Mr. Tamura Koji (). I simplified some steps to make it easier to make at home.【ASMR】
Recipe:
-200g cream cheese softened
-Add 50g sugar (original recipe 100g), stir well
-Beat in an egg and an egg yolk (2 eggs in the original recipe)
-Stir well
-Add 50g thick yogurt, 180g sour cream, 9g lemon juice, 15g cornstarch and stir well
-Heat 100g whipped cream, add a little vanilla extract (original recipe vanilla pod)
-After turning off the heat, add 50g of white chocolate to mix and melt
-Pour into the cheese batter, beat the eggs evenly
-sieve again
-Pour into the mold (be sure to spread oil paper)
-shake out the bubbles
-Bake in a water bath at 180° for 25 minutes, turn to 150° for 20 minutes
-Let cool and refrigerate for at least 4 hours
