While many of us are enjoying our holiday feasts, I want to show you what I normally eat in a day and how I cook for my family. We have recently gone more plant-based and I love using lots of fresh vegetables and herbs that I get from the market. You can put them in smoothies and salads so you never waste anything. But no matter what I cook, I always start the day with my coffee (and yes, I take sugar with that).
Breakfast I made for the kids:
Oatmeal with oat milk
Apple
Goji berries
Frozen fruits
Start of the day:
Coffee with brown sugar and oat milk
Supplements:
Spirulina
Chlorella
Vitamin C
Oral spray with vitamin B12 Iron vitamin D
St John’s wort
Breakfast (smoothie):
2 small or 1 big beetroot, cooked
50 g white beans from a can
1 ripe banana
100 g (freezed) blue berries
75 g raspberries
300 ml oat milk
juice zest of ½ lemon
2 dates
1 ts olive oil
Lunch:
Avocado
Cress
Spicy olive oil
Nut butter (hazelnuts/almonds)
Toasted bread
Dinner:
Cress
Arugula
Quinoa
Sweet potato
Bell pepper
Tomat
