Chop up onions, tomatoes, and lettuce. Combine guacamole ingredients in a bowl and mix. Add oil to a pan on medium heat and start with the onions with a small pinch of salt. Fry them for 3-4 minutes under occasional stirring until brown. Make space, add another bit of oil, and fry the chicken breast for 1 minute on each side. Meanwhile spread the guacamole on top of the tortilla. As soon as the chicken is cooked through add everything on top of the tortilla followed up by the tomatoes, lettuce, and mozzarella cheese. Roll it into a burrito shape. Add another bit of oil to the pan and fry the burrito on each side for 30 seconds. ROll the burrito into aluminum foil or parchment paper.
