Kiritsuke, a traditional japanese multipurpose chef’s knife. This is my interpretation with western style handle construction and double grind.

Steel: 3mm thick MA5MV (aka 420C, , X50CrMoV15).
Wood: Ebony and unknown hardwood (probably some kind of hard oak) both well aged by a luthier.
Blue vulcanized fiber liners, same as G10 or micarta spacers.
Pins: 8mm brass tubing; 6mm brass and copper mosaic; 4mm solid brass round stock.

0:20 Profiling with metal cutting bandsaw
0:50 Refining profile with 2x72 belt grinder
1:20 Drilling pin holes
1:50 Grinding main bevels
2:30 Pre heat treatment hand finish up to 320 grit
2:40 Packing with steel foil to prevent decarburization
3:15 Hardening: heating to 1050°C and soaking for 15min
3:25 Plate quenching with forced air
3:50 Temper
