HOMEMADE CHICKEN AND VEGETABLE SOUP

2 tablespoons olive oil
Salt and freshly ground pepper

1 chicken (3 pounds) boned, skinned, and visible fat removed (reserve bones and carcass), and cut breast meat into bite-size pieces
1 1/2 cups chopped onions
1 cup chopped celery
1 cup diced carrots
2 tablespoons minced garlic
2 bay leaves
½ cup sliced green onions
¼ cup fresh parsley leaves
¼ cup fresh basil, torn
3 quarts chicken stock
5 cups assorted chopped fresh vegetables, such as green beans, cabbage, zucchini, yellow squash, and bell peppers
1 1/2 cups torn spinach leaves, stemmed
