Agar-agar Jelly Fruit Tart, the idea was inspired by Jelly Fruit Tart @BooneBake The base layer is a biscuit layer, followed by coconut custard layer in the middle and topped with mixed fruits and agar-agar jelly. Its really very delicious. I worked on this quite a while, tested many times and finally managed to get it right. Do try it ! Important tips & updates: 1. Serve cold, biscuit base tend to get soft when warm 2. Last step, placing in the fridge, 3 hours may be sufficient as long as biscuit base is not soft ● Ingredients: Base tart layer: 15 digestive biscuits, 225 grams 15 grams icing sugar 70 grams butter (salted) Sugar syrup: 100 grams sugar 60 ml water Coconut milk custard layer: 2 egg yolks 75 grams castor sugar 12 grams cornstarch 110 ml coconut milk 4 grams agar-agar jelly powder 300 ml water (room temperature) 1-2 pandan leaves Fruits: 500 grams strawberrys 100 grams blueberry 3 kiwi
