Crispy, salty, delicious fried spam slices, with macaroni, a delicious broth - all topped with a crispy fried egg! This incredible dish is a traditional Hong Kong breakfast, from Jeremy’s second cookbook: Hong Kong Diner!
Ingredients
100g macaroni elbows
50g spam, sliced into thick slices
1 egg
deep fried onions
Chiu Chow chilli oil
2 tablespoons vegetable oil
1 spring onion to garnish
½ a gem lettuce, sliced in half lengthways
½ thumb-size piece of ginger, peeled and sliced
2 spring onions, roughly chopped
2-3 cloves of garlic, bashed, skin on
1 litre fresh chicken stock
2 tablespoons light soy sauce
1 tablespoon oyster sauce
