Yakisoba is one of the most recognizable Japanese street foods, and just the smell of the spiced sweet and savory sauce caramelizing around the noodles evokes memories of red lantern lit matsuri (祭り), or festivals. It’s usually made on a giant steel griddle called a teppan(鉄板), but for my Yakisoba Noodles Recipe, I’ve worked out a way to get that smoky teppan taste at home.
