Today’s video, I’m sharing a day in our life in Finland.

This week, I had the opportunity to clean our balcony thoroughly and enjoy drinking coffee outdoors because of the pleasant weather we’ve been having.

FOOD RECIPES:
* Asparagus and bacon pasta in brown butter and garlic *
Ingredients:
- 200g pasta ( pasta of your choice)
- Asparagus
- Bacon
- 3 garlic cloves
- 3 tbsp salted butter
- 2 tbsp olive oil / veg oil
- 1 tsp chili flakes
- Salt and pepper to taste
- Grated parmesan
Instructions:
- Cut asparagus in bite size pieces
- Cook pasta in a large pot of salted boiling water until al dente
- Heat olive oil or vegetable oil in a pan over medium heat.
- Add bacon, cook until golden brown
- Add asparagus , sauté and tossing frequently until crispy tender
- Add salt, black pepper and red chili flakes
- Add the cooked pasta
- Add 1/4 cup cooking water
- And stir until pasta is coated
- In a small pot, heat butter over medium heat, stir constantly to keep it moving
- Add cut garlic and keep stirring about 3-5 minutes until garlic is golden brown and crispy
- Keep sitting until the butter starts to turn golden brown
- Add the butter sauce into the pasta and stir to combine
- Divide pasta into plates and top with parmesan
- Enjoy
* Kale Risotto with Baked Salmon
Ingredients:
- 200 grams salmon
- Vegetable broth
- 2 tbsp olive oil
- Yellow onion, chopped
- 4 garlic cloves, minced
- Red pepper flakes ( optional )
- 1 cup arborio rice
- 1/ cup white wine ( optional )
- 1 cup freshly grated parmesan
- 3 tbsp butter
- Kale
- Salt and pepper to taste
Instructions:
- Add salt and pepper to the salmon and bake for 15-15 minutes 190°C )
- In a dutch oven pot, heat olive oil in medium heat
- Add onion, garlic, red pepper flakes, a pinch of salt and sauté for 2 minutes
- Add arborio rice and stir to coat for 1 minute
- Deglaze pan with white wine or 1/2 a cup of vegetable stock stirring rice until absorbed
- Add another 1/2 cup of vegetable stock at a time, stirring constantly between each addition
- Continue adding stock , taste test the doneness of rice
- Continue stirring and adding stock until rice is al dente
- Once rice is cooked, add kale
- Turn off the heat, add parmesan and butter
- Add salt and pepper to taste
- Stir until combine
- Top risotto with baked salmon
- Serve immediately
- Enjoy!
