How Did They Make Candy 200 Years Ago? - 1830s Caramels

Deliciously sweet caramel has been enjoyed for over 1,000 years, making it one of the oldest sweet treats still being enjoyed today. Originally, caramel was made using only 2 ingredients: sugar & water. The variety of sugar was important for achieving different flavors, with red sugar and molasses sugar being popular in the use of caramel making by the Arabs since their invention of the sweet dish sometime around the year 1,000. Caramel remained that simple from it’s invention in the 11th century until the mid 1800s when dairy was first added to the crystalized sugar in order to make the, “soft caramels“ that we still enjoy today.
