How To Make Bedouin Bread (A Simple Recipe)

Bedouin bread (aish) is a very popular type of flatbread in the Sinai. This is a film to show you how it’s made. The music was recorded at Bedouin Star Camp in Nuweiba and the musicians are Saleem and Saleh. The dough is just flour, water and salt. Make sure it has a nice texture by kneading it for long enough to make sure the ingredients are well mixed and it will be easy to roll. As soon as you’ve made the dough, split it into several smaller pieces (in ball shapes) ready to roll each one. Once you’ve rolled it, thin it out by throwing it between your hands and fingers, then you can cook it. The Bedouin use a black dome called a sage that looks like an upside down wok, with either fire or gas underneath. Let the bread cook for a minute on one side then move it, turning it and folding it to make sure it doesn’t burn or cook too much in one place. You’ll know when it’s ready as it will be cooked all over, with bubbles here and there. Pile the bread in a pot as you go along, until you’ve cooked all your pieces of dough. Serve hot with anything you like - cheese, eggs or honey are popular or it’s delicious on its own.
