Street Style Malai Boti Bun Kabab Serves 4 Recipe in English: Ingredients: Prepare Green Chutney: -Dahi (Yogurt) 1 Cup -Hari mirch (Green chillies) 4-5 -Podina (Mint leaves) ½ Cup -Hara dhania (Fresh coriander) ½ Cup -Lehsan (Garlic) cloves 5-6 -Sabut lal mirch (Button red chillies) 4-5 -Tatri (Citric acid) ¼ tsp -Namak (Salt) ½ tsp or to taste -Zeera (Cumin seeds) roasted & crushed ½ tbs -Lemon juice 2 tbs Prepare Chicken Malai Boti: -Chicken fillets 250g -Hari mirch (Green chillies) crushed 1 tbs -Dahi (Yogurt) 2-3 tbs -Cream 2-3 tbs -Adrak lehsan paste (Ginger garlic paste) ½ tbs -Lemon juice 1 tbs -Zeera (Cumin seeds) roasted & crushed 1 tsp -Garam masala powder ½ tsp -Namak (Salt) ½ tsp or to taste -Kali mirch powder (Black pepper powder) ½ tsp -Safed mirch powder (White pepper powder) ½ tsp -Ghee 2 tbs -Anda (Egg) 1 -Namak (Salt) to taste -Kali mirch powder (Black pepper powder) to taste -Ghee 1 tbs -Burger buns -Ghee 1 tbs Assembling: -Prepared green chutney -Prepared omelette -Prepared chicken malai boti -Cheddar cheese -Pyaz (Onion) rings Directions: Prepare Green Chutney: -In blender jug,add yogurt,green chillies,mint leaves,fresh coriander,garlic,button red chillies,citric acid, salt,cumin seeds and lemon juice,blend well & set aside. Prepare Chicken Malai Boti: -Cut chicken fillets into small cubes & set aside. -In a bowl,add green chilli,yogurt,cream,ginger garlic paste,lemon juice,cumin seeds,garam masala powder,salt,black pepper powder,white pepper powder & mix well. -Add chicken,mix well & marinate for 15 minutes. -Heat griddle,add ghee & let it melt. -Add marinated chicken,mix well & cook on high flame for 2-3 minutes,cover & cook on low flame for 2-3 minutes. -Then remove lid & cook on high flame for 3-4 minutes or until dries up and keep mixing in between & set aside. -In small bowl,add egg,salt,black pepper powder & whisk well. -On griddle,add ghee & let it melt. -Add whisked egg & cook from both sides & set aside. -On griddle,add ghee & toast burger buns from both sides until light golden. Assembling: -On burger bun,add & spread prepared green chutney,place prepared omelette,prepared malai chicken boti,cheddar cheese,onion rings & cover with another top bun (makes 4). -Serve with prepared green chutney. Recipe in Urdu: Directions: Prepare Green Chutney: -Blender jug mein dahi,hari mirch,podina,hara dhania,lehsan,sabut lal mirch,tatri,namak,zeera aur lemon juice dal ker ache tarhan blend ker lein & side per rakh dein. Prepare Chicken Malai Boti: -Chicken fillets ko small cubes mein cut ker lein & side per rakh dein. -Bowl mein hari mirch,dahi,cream,adrak lehsan paste,lemon juice,zeera,garam masala powder,namak, kali mirch powder aur safed mirch powder dal ker ache tarhan mix ker lein. -Chicken dal ker ache tarhan mix karein aur 15 minutes kliya marinate ker lein. -Tawa garam karein aur ghee dal ker melt ker lein. -Marinated chicken dal ker ache tarhan mix karein aur tez ancch per 2-3 minute kliya paka lein aur dhak ker halki ancch per 2-3 minutes kliya paka lein. -Lid hata lein aur tez ancch per 3-4 minutes ya sukh janay tak paka lein & bech bech mein mixing kertay rahein & side per rakh dein. -Chotay bowl mein anda,namak aur kali mirch powder dal ker ache tarhan whisk ker lein. -Tawa per ghee dal ker melt. -Pheeta huwa anda dal ker dono sides sa paka lein & side per rakh dein. Assembling: -Burger bun per tayyar hari chutney dal ker pheela lein,tayyar omelette,tayyar malai chicken boti, cheddar cheese aur pyaz rings dal ker upper sa top bun rakh dein (makes 4). -Tayyar hari chutney ka saath serve karein!
