Ingredients
For marinade
4 guajillo peppers
1 oz. achiote paste
1/4 cup pineapple juice
1/4 cup white vinegar
3 garlic cloves
1 tsp. Mexican oregano
1/2 tsp. ground cumin
1/4 tsp. black pepper
2 cloves
1 tsp. salt
Achiote paste substitute
2 tsp paprika
1/2 tbsp white vinegar
1/4 tsp dried oregano
1 garlic clove
1/8 teaspoon ground cumin
For tacos
2 Lbs. pork butt Shoulder
Salt and pepper
1 white onion
1 pineapple
1 bunch cilantro
12 Corn or flour tortillas
Cut meat into 1 inch steaks. Season with salt and pepper. Guajillo peppers boil for 15 minutes. Blend all the ingredients for marinade and cover meat completely. Marinade for 1 hour. Grill the meat and pineapple and assemble the tacos. Cheese is optional (Al Pastor usually without cheese), but I love cheese 🙂
